Ingredients
  

Dry Ingredients

  • cups 180g all-purpose flour
  • 1 tsp 4g baking powder
  • ¼ tsp 1g baking soda
  • ½ tsp 3g salt
  • ¾ tsp freshly grated nutmeg

Wet Ingredients

  • ½ cup 113g unsalted butter, softened
  • ½ cup 100g granulated sugar
  • 1 large egg room temperature
  • ½ tsp vanilla essence
  • tsp almond essence
  • ½ cup 120g milk

Strawberries

  • 1 cup 140–150g fresh strawberries, chopped small
  • 1 tbsp flour for tossing strawberries

Optional Nutmeg Sugar Topping

  • 1 tbsp 12g brown sugar
  • ¼ tsp freshly grated nutmeg

Instructions
 

Prep

  • Preheat oven to 325°F (163°C).
  • Line or grease a muffin pan.

Mixing – Dry Ingredients

  • Whisk together: flour, baking powder, baking soda, salt, and nutmeg
  • Set aside.

Mixing – Creaming

  • Cream together: butter and sugar
  • Mix until lighter in texture and slightly fluffy.

Mixing – Wet Ingredients

  • Add: egg, vanilla essence, almond essence
  • Mix until combined.
  • Stir in the milk.

Combining

  • Add the dry ingredients to the wet ingredients.
  • Fold until just combined.
  • Do not overmix.

Prepare & Fold in Strawberries

  • Toss chopped strawberries with 1 tbsp flour.
  • Gently fold into the batter until evenly distributed.

Baking

  • Fill muffin cups about ¾ full.
  • Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Optional Topping

  • For extra texture and flavor, lightly sprinkle the tops with: Brown sugar and Freshly grated nutmeg after baking.

Cooling

  • Allow muffins to cool in the pan for 5–10 minutes before removing.
  • Transfer to a wire rack to cool completely.

Baking Notes

  • Toss the berries: Coating the strawberries in flour helps prevent them from sinking to the bottom of the muffins.
