We’ve all been there:
The kitchen smells amazing, banana bread in the oven, you’re excited, and you do your little happy dance because you’re moments away from that first warm slice.
You go in for a test – toothpick/fork in hand. You check…and, ohh no, it’s a bit raw!
Talk about a total letdown.
You start freaking out because: WHAT NOW!?
Yep….that really happened to me!
What went wrong:
- I accidentally set my oven temperature too high
- The banana bread looked golden brown and ready on the outside…but the inside? Still a little gummy and undercooked.
Why it happened:
- The oven was too hot — causing the outside to cook too quickly and form a crust before the center could bake thoroughly.
- The type of pan,batter temperature, and where it sat in the oven all played a part.
How I fixed it:
- I lowered the oven temperature to about 300 degrees
- Loosely covered the pan with foil paper
- Let it bake longer, checking every 10–15 minutes depending on how set the middle looked
Other fixes to try:
- Leave the banana bread in the oven with the heat turned off for 10–15 minutes — the residual heat can help finish baking it.
- Still gummy? Slice and toast individual pieces — or better yet, make banana bread French toast
A few lessons learned:
- Always double check the oven and recipe temperature – it can truly cause panic, lol
- Get an oven thermometer (trust me, it will help!)
- Most importantly: Banana bread is forgiving — don’t toss it! There’s almost always a way to save it.
Final Results (Spoiler Alert!)
So here’s how it ended:
After all that…I ended up overbaking it — yep, burnt edges and all!
Talk about a palm to the face moment..lol
But honestly? It still tasted pretty good (banana bread really is forgiving).
I sliced off the crispy parts and enjoyed it anyway. Still a win in my book!

Final Takeaway:
Sometimes baking doesn’t go perfectly — and that’s okay.
