The spices were always there. Fall just gave them a new spotlight.
Two Seasons, One Kitchen
There is a moment every fall when the air shifts, that first genuinely crisp morning where you reach for something warm without thinking about it. The cafes bring out their spiced everything. The streets start to smell like cinnamon and caramel. And standing in the middle of all of it, I keep thinking: this feels familiar.
Because the warmth, the spice, the comfort, that’s been in my kitchen all year. Fall didn’t bring those things to me. It just finally caught up with what was already there.
Which sparked a question I haven’t been able to stop thinking about: what happens when fall meets the islands?
Fall Through a Caribbean Lens
Coming from Grenada there are three seasons: dry season, wet season, and Spicemas. In New York you can officially expect four — but unofficially it’s closer to twelve. Because what do you mean there’s a false fall, a second summer, and then actual fall? As long as I’ve been in New York this part of the weather leaves me genuinely confused.
As the season changes, you also feel everything shifting toward warmth and spice and comfort. However, the longer I’m in the kitchen the more I realize, fall flavors and Caribbean flavors have always been speaking the same language. As a result, fall gives me a new reason to explore familiar flavors with seasonal ingredients. And somewhere between the two worlds, I’m finding combinations I might never have thought to try before.
The Pairings: Where Fall Meets the Islands
Sitting between both worlds has opened up possibilities I hadn’t thought about before. Here are the combinations that have me most excited right now.
Caramel + Nutmeg
This is my favorite pairing so far — and the one I keep coming back to. Indeed, caramel is fall’s richest flavor: indulgent, deep, the kind of thing that makes you slow down. Additionally, nutmeg — freshly grated, always — remains the Caribbean’s warmest spice. Together they are bold, unexpected, and completely irresistible. The ultimate meeting of both worlds in a single bite.
This one is already becoming a donut. A Caramel Nutmeg Donut is a strong candidate for the next Grenadian Flavors series — I just need to figure out exactly what direction to take it. I’d genuinely love your thoughts on that one.
Apple + Ginger
Apple is fall’s most beloved fruit, sweet, crisp, a little tart depending on the variety. Granny Smith if you want that sharp brightness. Ginger is a Caribbean staple: ginger beer, ginger in cookies, ginger in teas, ginger as warmth with a kick of heat underneath it. Together they have a sharpness and brightness that neither carries alone.
What would an apple ginger crumble look like? An apple ginger scone? The possibilities genuinely feel endless and I’m just getting started.
Cinnamon + Apple
This pairing already made its way into my kitchen with my apple butter cinnamon rolls. Cinnamon is a permanent fixture in my pantry — ground, whole sticks, both — and fall and apples just felt inevitable together. Together, they made a bake that felt right at home in my kitchen; proof that bringing the seasons together doesn’t always require an entirely new idea.

Cinnamon + Coconut
Cinnamon has earned its place in the kitchen, quietly and proudly showing up in cocoa tea, black cake, and coconut drops. So what happens when I bring it together with coconut in a new way?
I could give my coconut banana bread a stronger cinnamon presence, bringing the warmth of the spice together with coconut’s rich, nutty flavor. Or I could go in a completely different direction with cinnamon coconut cookies. I must say, that second idea sounds unexpected in the best way.
What This Tells Me About My Kitchen
My kitchen has never been a space where only one place exists. It’s where my island roots live within my city kitchen. It’s where I have the most honest conversations between the place I’m from and the place where I am now.
Grenada taught me what warmth tastes like. New York gave me a new backdrop.
What’s Coming
Some of these pairings are still ideas turning over in my kitchen notebook. Others, like my apple butter cinnamon rolls, have already made it from idea to reality. And the Caramel Nutmeg Donuts are in development — I cannot wait to see where they land.
No matter what season is outside my window, my kitchen always knows where it came from. This fall, I’m letting both worlds show up together, make something warm, and remind me that home has a way of finding you no matter where you are.
So, which pairing are you most curious about? Drop it in the comments — I’d love to hear.
