Spice Isle Granola Bars

Rich cocoa, warm nutmeg, toasted coconut, and chunks of dark chocolate come together in these homemade granola bars inspired by the flavors of the Isle of Spice, Grenada. Perfect for breakfast, an afternoon snack, or an energy boost on the go.

Ingredients
  

Dry Ingredients

  • cups 225g old-fashioned rolled oats
  • 1 cup 85g unsweetened shredded coconut freshly grated
  • ¾ cup 90g chopped roasted cashews
  • ¼ cup 35g sunflower seeds
  • 2 tbsp 10g unsweetened cocoa powder
  • 1 tsp 2g freshly grated nutmeg
  • ½ tsp 1g ground cinnamon
  • ¼ tsp salt

Wet Ingredients

  • cup 113g honey
  • ¼ cup 50g packed light brown sugar
  • 2 tbsp 28g coconut oil
  • 1 tsp 5g vanilla extract

Mix-Ins

  • ½ cup 85g chopped 60–70% dark chocolate

Instructions
 

Prepare the Pan

  • Preheat the oven to 325°F (163°C).
  • Line an 8 × 8-inch baking pan with parchment paper, leaving an overhang on two sides.

Toast the Dry Ingredients

  • Spread the oats, coconut, cashews, and sunflower seeds on a baking sheet.
  • Toast for 8–10 minutes, stirring halfway through, until lightly golden and fragrant.
  • Transfer to a large bowl.
  • Add the cocoa powder, nutmeg, cinnamon, and salt. Stir to combine.

Make the Binder

  • In a small saucepan over medium-low heat, combine: honey, brown sugar, coconut oil
  • Cook, stirring constantly, until the sugar has completely dissolved and the mixture just begins to bubble around the edges, about 2–3 minutes.
  • Remove from the heat and stir in the vanilla.

Combine

  • Pour the warm binder over the oat mixture.
  • Mix until everything is evenly coated.
  • Allow the mixture to cool for about 5 minutes, then gently fold in the chopped dark chocolate.
  • Chrissy’s Tip: Cooling the mixture slightly keeps the chocolate in little pockets throughout the bars instead of allowing it to melt completely.

Press into the Pan

  • Transfer the mixture to the prepared pan.
  • Using the bottom of a measuring cup or another flat object, press the mixture very firmly into an even layer.
  • This is key to granola bars that hold together.

Bake

  • Bake for 12–15 minutes, until the edges are lightly golden.
  • The center should still feel slightly soft.

Cool

  • Allow the bars to cool completely in the pan.
  • For the cleanest cuts, refrigerate for 30–60 minutes before slicing into bars.

Notes

Chrissy’s Baking Notes

  • Freshly grated nutmeg gives these bars their signature Grenadian flavor.
  • Toasting the oats, coconut, cashews, and sunflower seeds adds depth and crunch.
  • Let the mixture cool slightly before adding the chocolate so you get chocolate chunks throughout the bars.
  • Press the mixture firmly into the pan. This helps prevent crumbly bars.
  • Don’t wait for the center to feel completely firm when they come out of the oven. The bars will continue to set as they cool.

 

Ingredient Tip

If you have access to Jouvay Chocolate, it’s a wonderful choice for this recipe. The 60% Dark & Sweet or 60% with Nutmeg both work beautifully. If not, any good-quality 60–70% dark chocolate is a great substitute.
 

Ingredient Alternatives & Allergy-Friendly Options

I can’t guarantee allergen-free results unless every ingredient is verified for your specific dietary needs. Always check ingredient labels for cross-contact warnings when allergies are severe.

Cashew Allergy

Replace the cashews with an equal amount of another nut or seed that works for you, such as:
  • chopped almonds
  • pumpkin seeds
  • additional sunflower seeds
For a nut-free version, use additional sunflower or pumpkin seeds and choose chocolate produced in a nut-free facility if necessary for your allergy.

 

Coconut Allergy

The coconut is a major part of the flavor profile, but if needed, you can replace the shredded coconut with additional rolled oats or seeds. The flavor and texture will be different.
Since the recipe also uses coconut oil, substitute it with an equal amount of neutral vegetable oil or another suitable baking oil.

 

Dairy Allergy

The recipe itself contains no dairy, but check the dark chocolate label carefully, as some chocolate contains milk or is processed alongside dairy.
Choose a dairy-free dark chocolate if needed.

 

Vegan

Honey is the main ingredient that needs to be replaced.
Substitute the ⅓ cup honey with ⅓ cup maple syrup. Use dairy-free dark chocolate as well.
Note: I haven’t tested the maple syrup version, so the texture may vary slightly from the original recipe.

Gluten-Free

The ingredients themselves can be gluten-free, but oats are commonly subject to cross-contact. For those with celiac disease or a serious gluten allergy, use certified gluten-free rolled oats and verify all other ingredients.
 

Allergy Note

Always check ingredient labels when baking for someone with an allergy. Chocolate, oats, coconut, and other packaged ingredients may be processed in facilities that also handle common allergens.
 

Storage

Store in an airtight container at room temperature for up to 5 days, or refrigerate for up to 2 weeks.
For the best texture, allow refrigerated bars to sit at room temperature for a few minutes before eating.
